Holiday Cheese Board – Finding Michele

After posting the long, and relatively complicated croissants video last week, I decided to take a little mental break, and do a video for how to put together a holiday cheese board. I’ve wanted to do this one for a while, and since we’re in the middle of entertaining season, I thought the timing was perfect.

It’s always stressful to have people coming over this time of the year. You want to please, and impress, but there never seems to be enough time to get everything done, especially in the kitchen, and that’s when a well-designed cheese board can save the day.

They’re fast to put together, and you don’t need any special skills, other than being able to talk to strangers at the fancy grocery store. Most feature extensive cheese selections, and it’s been my experience that the people who work in those departments love helping you pick out your cheese. 

I know this, since I’m married to one of those people. Michele used to sell cheese in various shops and charcuteries, and her selection/pairing skills are legendary. Customers would simply tell her how many guests were coming, as well as what was being served, in particular, which adult beverages, and she would work her magic.

I gave you our basic approach for composing one of these boards, but there are many different ways you can go, so I encourage you to find the “Michele” at whichever place you’re buying your cheese. You won’t regret it. No matter which cheeses you end up with, or how you garnish them, I really hope you give this a try soon. Enjoy!

Flaxseed Crackers - Meet the “Flackers”

I usually try new recipes, or techniques because they sound delicious, or unusual, but once in a while I’ll try something just because it sounds impossible, and that was the case with these flaxseed crackers. 

I heard that if you mix flaxseeds with an equal amount of water, let it hydrate, spread it thin, and bake it in a low oven, you’ll get light, crispy, and surprisingly tasty crackers. I heard right.

I generally like to leave eating seeds to the birds, but these have a very mild nutty/earthy flavor, and while quite light, they’re still study enough to use with your favorite dips and spreads. Above and beyond the taste, I find that these start to lose their crispiness after about a day, so if you make them ahead of time, I’d re-crisp them in the oven again for maybe 30 minutes to dry them back out.

Also, please feel free to season these more creatively than I did. Although a plain cracker is perfect for pairing with a slice of cheese, I can’t help but think there are so many other ways these could’ve been spiced-up. Regardless of what you add to yours, I really hope you give them a try soon. Enjoy!


PLEASE NOTE: I've been told that whole flax seeds are not fully digestible, and to get the health benefits you should use flaxseed meal, but other sources are telling me that the soaking, and chewing takes care of that, maybe. Probably not a big deal unless you're going to eat a whole batch, but consider yourself warned if you are sensitive to high-fiber foods!
 
Ingredients for 32 Flaxseed Crackers:
1 cup raw flax seeds
3/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
pinch of cayenne
1 cup cold water

- Soak overnight, then bake at 200 F. for 3 hours, or until crispy.

Chicken Little – The Sky is Not Falling

Armed with nothing more than a sharp boning knife, and some patience, pretty much anyone can make this visually impressive, “chicken little.” At least that’s what I’m calling it, for lack of a better name. In the business, this is sometimes referred to as an individual chicken ballotine, which really doesn’t have much of a ring to it.

I was thinking of going with “pear chicken,” but then I’d have to deal with all those “where’s the pear?” comments. Anyway, regardless of the name, this is a real showstopper, and easily adaptable when it comes to seasonings, and glazes. I did the simplest pan sauce possible, by deglazing the drippings with a splash of chicken stock, but you could use wine, and/or demiglace, to fancy it up even more.

I’m recommending that we cook this to an internal temp of 150 F., to ensure ultra-juicy meat, which will terrify some of you, “Henny Penny’s”. I still see recommendations online to roast chicken to 165 F., which is not only crazy, but completely unnecessary. Anything that would harm you is killed at 140 F., so please try to relax.

Since there is a bit of production involved, I do suggest making these ahead, and keeping them in the fridge until you’re ready to serve. Not only will they roast to an even more beautiful golden brown, but your flavored butter ingredients inside will have time to permeate the meat. So, whether you’re making these to impress guests at a dinner party, or just improve your knife skills, or both, I really hope you give them a try soon. Enjoy!


Ingredients for 2 portions:
one 1.5 pound game hen (this will work with any size bird, but roasting times will change)
salt and freshly ground black pepper to taste
For the butter:
1 clove garlic, sliced
large pinch of salt and pepper
1 teaspoon minced thyme and rosemary
2 tablespoons butter
1/2 cup seasoned chicken broth to deglaze and reduce in roasting pan

- Roast at 450 F. for about 30 minutes, or until internal temp of 150 F.

Stuffed Hasselback Turkey Breast – A Little Thanksgiving

Everyone loves a traditional turkey dinner with all the fixings, but because of the time and work involved, we usually only get to enjoy it once a year on Thanksgiving. So, what if we create a second holiday, called “Little Thanksgiving,” and feature this smaller, and much easier, Hasselback turkey? 

By the way, when I say easier, that assumes we’ve figured out how to carve it significantly better than I demonstrated in the video.

A thinner, more flexible knife would have been much better, as well as just slicing off one section at a time. I may try another one, but before stuffing, I'll go around the outside edge of the breast with a knife, cutting in about an inch, where it attaches to the bone. This would still leave most of the meat attached at the center, and probably make slicing simpler.

I guess we could try using a boneless breast, but I really think the ribcage is important for keeping the meat, if you’ll pardon the expression, moist. If you’ve tried this sans bones, please let me know how it came out. Regardless, since these breasts can really vary in size, be sure to use a thermometer to check doneness. So, whether you do this for regular Thanksgiving, or that new “Little Thanksgiving” everyone is talking about, I really do hope you give this a try soon. Enjoy!

1 tablespoon melted butter for brushing on before roasting
For the very basic stuffing:
2 cups small dry bread cubes
1 teaspoon poultry seasoning (dried sage, rosemary, and thyme)
1/2 teaspoon kosher salt
freshly ground black pepper and cayenne to taste
1/2 cup diced onion and 1/2 cup diced celery sautéed in butter until golden
1 cup hot chicken broth, plus more if needed
1 large egg yolk

NOTE: In the video I said to roast at 350 F., to an internal temp of 150 F., but in hindsight, I’m thinking that a 375 F. oven would work better.

For the stuffing, try these recipes, and cook the extra mixture in a pan alongside your Hasselback Turkey Breast.

Rice Crispy Wings – No Breakfast Cereal was Harmed in the Making of this Video

As promised, here is the rice-flour coated chicken wings recipe I teased in the mumbo sauce video. It’s hard to believe that this is the first fried wings video we’ve ever done, but that was the case, which is why I’m so glad these turned out as well as they did. 

Besides being gluten-free, which is probably a big deal to a small, but enthusiastic part of my audience, this rice flour coating ended up being light, crispy, and extremely sauce friendly.

The original buffalo style chicken wings are fried without any type of coating, and while I do enjoy them that way, they aren’t the best at holding on to a sauce. This is why people started adding some kind of starch to the outside, which creates a less slick, rougher surface, that really grabs onto whatever you’re dipping, or tossing them in.

By the way, before your wings get coated with the flour, you’re free to spice these anyway you want. Other than the salt, everything else is up for grabs. I went very simple, as I usually do, but the mind reels at the possibilities. Regardless of how you flavor yours, I really do hope you give them a try soon. Enjoy!

Sourdough Bread: Part 2 – The Finished Loaf

Welcome to part two in this series for how to make your own sourdough bread, using nothing more than flour, water, a little salt, and a whole lot of time. 

Yes, making your own sourdough does take a while, but the amount of actual work is minimal, and the bread you’ll get is spectacular…at least in San Francisco. Your results may vary.

While I’ve made sourdough before, I’ve never actually had to provide specific measurements, which is why I’ll credit Northwest Sourdoughonce again, since the amounts below were slightly adapted from there. Speaking of which, anything you’re not sure about after watching this, can be cleared up by visiting Teresa’s amazing channel.

If you don’t have a banneton, you can simply line a similarly sized bowl with a tightly woven cotton kitchen towel, which has been generously coated with rice flour. I’ve used that before, and it works exactly the same. The only difference is the wooden basket “breathes,” unlike a metal bowl, but I don’t think that’s a huge deal.

Since the wild yeast and bacteria that make this bread work vary from one part of the country/world to another, I can’t guarantee you’ll get the same results I did, but nevertheless, I really do think you should try anyway. In fact, if you do have some success, I’d love to see the results posted on Twitter for all to see.  Good luck, and as always, enjoy!


Ingredients for one loaf:
100 grams starter
250 grams water
8 grams kosher salt
394 grams white bread flour
(You’ll also need rice flour for the 10-inch banneton)

- Let ferment for 4 hours, “folding” at the 2 hour mark
- Form loaf and transfer into prepped banneton
- “Retard” dough in fridge for 10-12 hours
- Let rise in warm spot for 3 to 5 hours or until it passes “poke test”
- Bake at 450 F. for 25 to 30 minutes

Sourdough Bread: Part 1 – Let’s Get This Started

Welcome to part one of a two part video series for how to make sourdough bread, with nothing more than flour and water. If you’re thinking I already did this before, well, we did, sort of. I did a multi-part series for this long ago, but it was horribly shot, confusing, and the results weren’t good. Other than that, it was fine.

Anyway, thanks to an amazing refresher course from Northwest Sourdough (which I highly recommend you check out, and subscribe to), I decided to take those videos down, and do an updated, 2-part recipe. There’s really nothing like homemade sourdough, and notwithstanding the time it takes for your starter to mature, it’s a very simple, and easy process.

The exact number of grams seen herein doesn’t really matter, as long as you’re using exactly the same amount of flour and water, by weight. I picked 70 grams, since it seemed like a nice amount to film, but the ratio is really the key. Same goes for the types of flour used. I like half spelt, and half bread flour, but this will work with pretty much any combination, including all wheat flour.

I never like to get too deep in the weeds when showing a technique, so if you do want all the Latin terms, and detailed explanations for what exactly is happening here, there are endless resources online. All I care about is that this works. After the second day, toss away half your mixture, feed with equal parts flour and water, wait for the microorganisms to do their thing. Stay tuned for part two, or as I call it the good part, where we’re going to make a loaf of incredibly beautiful, tasty bread, and as always, enjoy!


Day 1: combined 70 g *water and 70 g flour
Day 2: add 70 g water and 70 g flour
Day 3: discard 140 g of your starter, and feed with 70 g water and 70 g flour
Day 4 until maybe Day 10: repeat the step above, every day, until your starter smells fruity, yeasty, and beautifully fermented.
- Test by seeing if the mixture doubles within 2 to 3 hours after feeding. 
-- All this is based on you keeping the mixture at 70°. If it’s cooler than that this will take longer, and if it’s warmer it may ferment too fast, although I’m not sure if that’s a problem.
Note: Once done, you can store in the fridge until needed. Most people recommend you feed it once a month or so.

* For best results, use bottled water, as chlorine can kill the yeast/bacteria.

Homemade Phyllo aka Filo Dough – One Step Away from Baklava

At long last, we’re finally going to post a baklava video, which I decided to make a lot harder, by making the filo dough from scratch. 

While not using the incredibly convenient, and significantly faster frozen filo dough does make this a lengthier project, it also makes it much more interesting, and way more fun.

Fair warning, I’ve only done filo a handful of times, so I’m no expert at making this, or baklava, for that matter; but the good news is, despite that, I still managed to achieve some fairly excellent results, and suspect you will as well. I’m sure with a little practice I could probably do more than five at a time, but once you get rolling, the batches go pretty quick, and each one seems to get a little better than the last.

I'll post the baklava video next week, but if you want to practice, you could make a batch, and then do search on Allrecipes for recipes that use filo. There's no shortage of amazingly delicious things to do with this paper thin dough. Stay tuned for baklava, but in the meantime, I hope you give this a try soon. Enjoy!


Makes enough for about twenty (10 to 12 inch round) sheets of filo:
2 cups all-purpose flour, plus more for kneading
5 teaspoons olive oil
1/2 teaspoon fine salt
2 teaspoons white wine vinegar
3/4 cups warm water (about 110 F.)
For the starch mixture:
1/2 cup cornstarch
2 tablespoons all-purpose flour

The Butcher's Steak – Too Good to Sell?

This great steak is considered something of a butcher shop “secret,” but not because they’re selfish, and can’t stand the thought of you being happy. It’s just an odd looking cut, which requires a specific trimming technique to remove one of the toughest pieces of connective tissue on the entire animal.

Combine that with the fact that there’s only one per cow, and you have something that’s a little tricky to sell, although that seems to be changing a bit. This steak has become popular on restaurant menus, going by the name, “hanger steak,” and that’s led to it being carried in some of your finer butcher shops.

Even though it takes a little bit of time, the trimming is pretty simple, and probably easier than I made it look. Carefully trim away any of the tough-feeling membranes on the surface, and divide in half lengthwise, along the center connective tissue. Once that’s cut away, you’re pretty much done, other than deciding how to cook it.

Butcher’s steak is great in a pan, under the broiler, and of course, on the grill. It takes to marinades wonderfully, and can sub in for any cut of steak in any recipe. It’s not only tender, and affordable, but also extremely beefy.

This is probably the most strongly flavored steak cut, and some even describe it as having a subtle gaminess, although I think that’s a bit much. There’s only one way to know for sure, so I really do hope you give this a try soon. Enjoy!


Ingredients for 4 portions:
1 whole butcher’s steak aka hanger steak, about 2 pounds
salt and freshly ground black pepper to taste
1 tablespoon clarified butter
For the sauce:
2/3 cup chicken broth to deglaze pan
juices from resting steaks
2 teaspoons balsamic vinegar, or to taste
2 tablespoon cold butter, cut in cubes
salt to taste

The Name's Cream...Clotted Cream

If you invented a cream preparation so incredibly delicious that you couldn’t bear the thought of anyone besides you, and the other dairy farmers in the area enjoying it, adding the word “clotted” to the name is a pretty sound strategy.

While the name doesn’t exactly make the mouth water, the flavor and texture are the stuff of legends. The long, slow cooking sort of toasts the cream, which imparts a sweet, nuttiness that I don’t think I’ve tasted in any other preparation.

Most modern ovens go down as low as 175-180 F., which is ideal for this technique. 200 F. will work, but maybe check after 10 hours, and see how things look. The other huge factor here is the cream. Be sure to get the best you can. It should be from grass-fed cows, and have a fat content of between 36-40%.

Avoid anything that says “Ultra-Pasteurized,” since it’s been heat-treated, and you’ll not get the same results. Other than this taking a day or two, the technique could not be easier, and I wasn’t exaggerating when I said it’s one of the most amazing things ever. Ingredients:
4 cups heavy cream
8 x 8-inch glass or ceramic baking dish
- Bake at 175-180 F. for 12 hours. Chill overnight before separating the “clots.” Use the reserved liquid for baking biscuits.

“One-Step” Chicken Noodle Soup – For When You’re Sick of Following Recipes

Or, just plain sick. Yes, I’m a little under the weather, but as they say, the show must go on, and that “show” ended up being me just throwing all my chicken noodle soup ingredients into a pot, crossing my fingers, and hoping for the best.

And while I know this method didn’t produce “the best” chicken noodle soup, I was amazed at how really good it was, and how remarkably close it was to a certain canned variety. I can’t give brand names, but it rhymes with Frogresso.

If you do decide to use this one-step approach, there are a few things you need to pay attention to. You’ll want to use a pasta or noodle that’s at least a large as the fusilli I used so it doesn’t completely break down; as well as, to be sure to dice/slice your veggies nice and thin, so they get tender relatively quickly.

I just used a knife, but I bet you have one of those vegetable slicers somewhere, and this would be the perfect operation to use it for. Above and beyond that, feel free to add in other “medicinal” ingredients, such as garlic, ginger, and hot chilies. But whether you embellish or not, or you’re sick, or feeling just fine, I really do hope you give this a try soon. Enjoy!

1/2 cup dried fusilli pasta (corkscrew pasta)
1/3 finely minced onions
1 carrot, very thinly sliced
1 rib celery, thinly sliced
salt, freshly ground black pepper, and cayenne to taste
2 teaspoons ketchup
1 fresh thyme sprig, or pinch of dried thyme, optional
4 cups chicken broth
2 tablespoons freshly chopped Italian parsley

Norwegian Butter Sauce – Better Know as Sandefjordsmør

My Norwegian pronunciations aren’t any better than my French ones, but as challenging as saying, “Sandefjordsmør,” may be, this amazingly simple butter sauce is not very challenging to make. 

People get nervous about butter sauce, since many types can easily “break,” which means the butter separates, but because of the cream, this is extremely stable, and very user-friendly. As long you don’t dump all the cold butter cubes in at once, and just toss them in a few at a time, your sauce will not break. 

Along the same lines, if you make the sauce early, be sure to keep it in a warm spot, since if it gets cold and solidifies, and then you try and reheat it, the butter will most likely separate. Above and beyond being easy, and relatively sturdy, this Sandefjordsmør is also quite versatile.

Not only is it wonderful on all types of fish, but also works beautifully with shrimp and lobster. Speaking of versatility, the same goes for changing up the herbs. So, no matter how you flavor it, or what you spoon it over, I really hope you give this a try soon. Enjoy!

1/2 cup heavy cream
5 tablespoons cold unsalted, grass-fed butter, cut in cubes
